Ingredients
- 750g chicken thighs, thinly sliced
- 2 tbsp olive oil

2½ tbsp Friendly Blends Green Fusion

5 wraps
- 1¼ cups pineapple, finely chopped (fresh or canned in juice, drained)
- 1 large red capsicum, thinly sliced
- 2½ cups iceberg or cos lettuce, shredded

1¼ tasty cheese

¾ cup Greek yoghurt
- Zest of 1 lemon
- 2 tbsp lemon juice

2 tsp Friendly Blends Green Fusion
Yoghurt Sauce
Directions
In a large bowl, combine sliced chicken with olive oil and Green Fusion blend. Mix well. Heat a large non-stick pan over medium-high heat. Sauté chicken for 6–8 minutes or until golden and fully cooked.
In a small bowl, whisk together yoghurt, lemon zest, lemon juice, Green Fusion, and a pinch of salt. Taste and adjust as needed.
Warm the wraps slightly if desired. Spread a generous spoonful of the yoghurt sauce on each. Layer with cooked chicken, lettuce, capsicum, pineapple, and cheese.
Fold and roll each wrap tightly. Slice in half if preferred and serve immediately with extra sauce on the side.
Recipe Note
Substitute with lactose-free dairy or gluten-free alternatives where needed.
Keep pineapple to ¼ cup per serve for Low FODMAP.
