These Low FODMAP Beef Tacos are made with our Mexican Spice blend, a low FODMAP taco seasoning that brings the classic taco night flavour without onion or garlic. Easy, familiar, and gentle on the stomach. A simple dinner you can rely on any night of the week.
Ingredients
- 1 tbsp extra virgin olive oil
- 500g beef mince

25g Friendly Blends Mexican Spice Blend

8–10 tortillas
- 1/2 head iceberg or cos lettuce, roughly chopped
- 1 x 100g can corn, drained and rinsed (limit to 2 tbsp per serve)
- 2 tomatoes, diced

1 avocado, smashed

Shredded tasty or cheddar cheese

Sour cream
- Fresh coriander
- Jalapeños (optional)

Directions
- Heat olive oil in a large pan over high heat. Add beef mince and cook until halfway browned, breaking it up as it cooks.
Stir in Mexican Spice Blend and cook for 2 minutes until fragrant and evenly coated. Remove from heat.
Warm tortillas as per directions on packet.
Spoon the seasoned beef into each tortilla and finish with your favourite toppings.
- Serve immediately and enjoy.
Recipe Note
Substitute with lactose-free dairy or gluten-free alternatives where needed.
If using more than 2 tbsp of sour cream per serve, choose a lactose-free sour cream to keep the recipe low FODMAP.
Keep corn and avocado portions within safe low FODMAP limits.
Swap beef for chicken or tofu for a twist and just adjust cooking time accordingly.
