Mushrooms are one of the trickiest ingredients on a low FODMAP diet, not because they're all off-limits, but because the answer depends entirely on which type you're using. Get the variety right, and mushrooms are back on the menu.
The short answer
It depends on the mushroom. Most common varieties (button, portobello, shiitake) are high FODMAP even in small amounts but oyster mushrooms are a genuine exception, and canned button mushrooms are safer than fresh ones.
Why mushrooms are complicated
Most mushrooms are high in mannitol, the same sugar alcohol found in cauliflower. Unlike cauliflower, most mushroom varieties haven't had their thresholds improve with testing, a standard fresh button, portobello, or shiitake mushroom remains high FODMAP even in small servings, which is why mushrooms often get written off completely.
The exception: oyster mushrooms
Oyster mushrooms are the standout low FODMAP mushroom. Monash University testing shows they're low FODMAP at a generous 1 cup (75g) serving, with some sources noting they remain low FODMAP even at larger amounts. This makes oyster mushrooms genuinely useful for FODMAP-friendly cooking, creamy mushroom pasta, stir-fries, and risottos are all realistic again.
What about canned mushrooms?
Canned button (champignon) mushrooms are a helpful workaround if oyster mushrooms aren't available. Because FODMAPs are water-soluble, much of the mannitol leaches out into the canning liquid during processing. Canned button mushrooms are low FODMAP at around ½ cup (75g), rinsed and drained, a genuinely different result from their fresh equivalent, which stays high FODMAP.
What to avoid in the elimination phase

- Dried mushrooms generally, since FODMAPs tend to concentrate during drying, oyster mushrooms haven't been tested dried, so it's safest to stick with fresh

- Rinse and drain canned button mushrooms well before using, since some residual FODMAPs can remain in the liquid clinging to the mushrooms
- Mushroom-infused oil (mushrooms cooked in oil, then strained out) may carry flavour with minimal mannitol, following the same logic as garlic-infused oil, though this hasn't been formally lab-tested
